Mediterranean Chicken Meatballs
Ingredients
- 1 pound ground chicken 
- 1/2 cup panko breadcrumbs 
- 1 large egg 
- 1/2 cup feta, crumbled 
- 1/4 cup red onions, diced fine 
- 1/4 cup sun dried tomatoes, diced fine 
- 1 teaspoon dill 
- 1 teaspoon oregano 
- 1 teaspoon garlic powder 
- 1/2 teaspoon salt 
- 2 tablespoons olive oil 
Preheat oven to 400°F and line a large baking sheet with parchment paper.
Combine all the ingredients together in a very large bowl using your hand till all the ingredients are thoroughly mixed together.
Using a cookie scoop, scoop out the meat and then with your hand roll into a ball and place on the baking sheet you had lined with parchment paper.
Bake the meatballs for 30 minutes or until the chicken is cooked through. Let stand for a few minutes before serving.
Serve with Tzatziki sauce and some Greek roasted potatoes or a vegetable of your choice.
